Banana Pancakes

Makes 10 - 2g fiber / less than 1g fat per pancake

A great way to start the day, or a nice afternoon snack!

Ingredients:

1/2 cup / 75g / 2-1/2 oz plain whole meal flour
1/2 cup / 60 g / 2 oz plain flour
1 tsp baking powder
1 tsp ground cinnamon
1-1/2 tsp ground nutmeg
1 cup / 250 ml / 8 fl oz skim milk
2 egg whites, lightly beaten
2 overripe bananas, mashed
1/2 cup / 125 ml / 4 fl oz low-fat custard, warmed

Directions:

1. Sift flours, baking powder, cinnamon and nutmeg together into a bowl. Stir in milk.

2. Add egg whites and bananas and mix well to combine.

3. Lightly spray a nonstick frying pan with cooking oil spray and heat over a medium-high heat. Pour 1/4 cup/60 ml/2 fl z batter into pan andd cook until bubbles form on the surface and base is golden. Turn over and cook for 1-2 minutes longer or until golden on second side.

4. To serve, place 1-2 pancakes on serving plate and top with custard.
